So today I was scrounging around the fridge, which was almost empty and the Pantry (which luckily is usually stocked with my favourite baking goods), looking for something to make the kids, which was healthy but also a treat. I had a bag of egg whites in the fridge which needed to be used up, so I decide to throw a together a Paleo/ Keto friendly chocolate loaf.
Guess what? It was a hit with the kids and I probably devoured a good quarter of it too! This loaf is high protein, good fats, low carb and low sugar (if you leave out the maple syrup and dried fruit).
Dry Ingredients:
- 2 Cups Almond Meal
- 1/2 Cup Coconut Flour
- 1 1/2 Tbsp Baking Powder
- 1 tsp cinnamon
- 1 Tbsp mixed spiced (as in the stuff you use for fruit cakes)
- 2 Tbsp Heaped Cacao Powder
- 1/4 cup Sultanas
- 1/4 cup Pepita/Sunflower seeds
Wet Ingredients:
- 2 Cups Eggs White
- 1 Tbsp Maple Syrup
- 2 Tbsp water
Method:
Mix dry ingredients together then fold in wet ingredients. Line a loaf tin with baking paper and grease with Coconut Oil. Bake in preheated oven at 180 degrees Celsius for up to 45 minute.
Enjoy with you favourite Nut or Fruit Spreads.
Store in fridge or freeze.
