Spicy-Savoury Breakfast Mince with Eggs
Perfect Breakfast on a cold and rainy morning. This bowl is pact full of protein and spice to give your day a healthy kick-start.
500g turkey mince or mince of your choice
1 brown onion grated or finely diced
2 garlic cloves minced or finely diced
2 tbsp tomato paste (no added sugar)
¼ cup pine nuts
2 tbsp olive oil
½ cup chopped fresh parsley
salt and pepper to your liking
Heat pan with the olive oil, brown onion and garlic. Add mince until partially cooked. Add all other ingredients (except the parsley) allow to simmer and add fresh parley before taking off the heat.
Serve on a bed of spinach leaves or rainbow slaw with two runny eggs on top. To add some crunch to your dish, add a sprinkle of Pimp my Salad Sprinkles to finish.
Serve with two runny eggs and some thick cut slices of delicious toasted Paleo or Protein Bread.
We like to prepare this in batches and keep in the freezer in small containers, ready to whip out in the morning and heat up while preparing the eggs! If your are really in a rush and you don’t mind cold eggs, you can also prepare your soft boiled eggs in advance.
